Foggy Mountain Pasta with a Spicy Sausage Red Sauce

This recipe is true comfort food. Warm, creamy....DELICIOUS.

This recipe uses our dried Grano di Inverno Girelle pasta. However, any of our fresh or dried pasta types would work.
Foggy Mountain Pasta
1/2 shallot diced
1/2 cup fresh fennel
2 diced garlic cloves
2 tbsp butter
2 tbsp tomato paste
2 tsp red pepper flakes
1/4 cup grated parmesan
1 lemon juiced
2 cups saved pasta water 
Pasta:Boil water in a medium pot. Add Foggy Mountain Pasta, cook al dente and reserve 2 cups pasta water.
Sausage: Cook in a hot skillet, breaking up until thoroughly browned and cooked through. Set aside.
Sauce: Add butter, shallot and fennel to a large hot skillet. Cook until fragrant. Then add in tomato paste, garlic and red pepper flakes until browned about 3-5 minutes. Add about 1 cup pasta water to sauce and lemon juice. Cook for 2 minutes then remove from heat, add in pasta, 1/2 cup heavy cream, 1/2 tbsp butter and cooked sausage.
Top with fennel fronds, basil, lemon zest and freshly cracked black pepper.
